
INGREDIENTS:
Kale salad
- 2 bunches of kale
- 1 lemon
- 1/4 cup sliced almonds
- 1 avocado diced
- 1/2 cup diced cherry tomatos
Tahini dressing
- 3 tablespoons tahini
- 1/4 cup water
- 2 teaspoons olive oil
- juice from one lemon
- 1 teaspoon garlic
- 1/2 teaspoon salt
INSTRUCTIONS:
- Clean kale, and remove the leaves from the stems.
- Squeeze the juice from one lemon over the leaves, and massage the kale with your hands to help soften the leaves a bit.
- Mix up the dressing, and pour over the kale (use as much dressing as you like).
- Add sliced avocado, tomato, and almonds and toss.
You can easily add a protein to this salad if you want. Sauted tofu, or tempeh, or even some cooked quinoa will add some protein, and make this salad a very filling meal.
