Kale Salad with Lemon Tahini Dressing

INGREDIENTS:

Kale salad

  • 2 bunches of kale

  • 1 lemon

  • 1/4 cup sliced almonds

  • 1 avocado diced

  • 1/2 cup diced cherry tomatos

Tahini dressing

  • 3 tablespoons tahini

  • 1/4 cup water

  • 2 teaspoons olive oil

  • juice from one lemon

  • 1 teaspoon garlic

  • 1/2 teaspoon salt

INSTRUCTIONS:

  1. Clean kale, and remove the leaves from the stems.

  2. Squeeze the juice from one lemon over the leaves, and massage the kale with your hands to help soften the leaves a bit.

  3. Mix up the dressing, and pour over the kale (use as much dressing as you like).

  4. Add sliced avocado, tomato, and almonds and toss.

You can easily add a protein to this salad if you want. Sauted tofu, or tempeh, or even some cooked quinoa will add some protein, and make this salad a very filling meal.
